Exploring Virginia Cuisine

Brunswick Stew

Brunswick stew is a hearty, tomato-based stew that originated in the Southern United States. It's made with meat, vegetables, and barbecue sauce, and often includes lima beans, corn, and potatoes

According to local tradition, Matthews, an enslaved Black cook, created the stew in 1828 while hunting with Dr. Creed Hoskins. The Virginia General Assembly passed a resolution in 1988 naming Brunswick County the official birthplace of Brunswick stew.
