Chicken fried steak

Chicken fried steak is a Southern dish of breaded and fried beefsteak, usually served with gravy. The beef is often tenderized cube steak, but can also be sirloin tip. The dish is similar to fried chicken, which is why it's called "chicken fried".



As late as 1930 The Bride's Cook Book of Oklahoma City offered the recipe as breaded steak. Where and when the term "chicken-fried steak" began remains a mystery, but most authorities agree that it probably developed in the 1930s.
