Exploring Nebraska Cuisine

Reuben sandwich

The history of the Reuben sandwich is debated, with competing claims from New York and Omaha.

The Reuben sandwich may have originated at the Blackstone Hotel in Omaha, Nebraska in the 1920s. Reuben Kulakofsky, a local grocer and poker player, may have requested the sandwich from the hotel's chef. The hotel's chef, Bernard Schimmel, may have created the sandwich with corned beef, sauerkraut, Swiss cheese, and Russian dressing.

Evidence
-A menu from The Plush Horse restaurant in Omaha in the mid-1940s lists the Reuben sandwich.
-A menu from the Cornhusker Hotel in Lincoln in 1937 may be the first written evidence of the Reuben sandwich.
-In 1956, Fern Snider, a cook at the Blackstone, won the National Sandwich Idea Contest with a recipe for the Reuben.
